Milk oolong is made from young buds and top leaves of the tea bush. The leaves are first left to wilt, allowing some moisture to evaporate and light oxidation to begin. Then the leaves are carefully rolled and given time for partial fermentation. Afterward, the leaves are lightly roasted or warmed to halt oxidation and give the tea a creamy, delicate flavor. Finally, the leaves are dried and shaped into thin or ball-shaped leaves that unfold during brewing.
