El Jardín is a family-owned farm in La Paz, Honduras, established in 1981 and run by four generations of coffee growers. Located at 1400–1650 m.a.s.l. near the Montecillos nature reserve, the farm benefits from clay-rich soils and a cool, mountainous climate, which favors lower yields but higher quality beans. On its 32 hectares, the farm grows coffee scoring 85+ and 83 points, as well as avocados, using sustainable practices such as organic matter recycling and soil preservation. Their signature process is a 90-hour anaerobic dry fermentation: ripe cherries are hand-sorted, fermented whole in hermetically sealed tanks, and then dried on raised beds. This method produces intense aroma and tropical flavor notes — bright, fruity, berry-like, and winey — while avoiding overly alcoholic tones through carefully controlled pH levels.
