Mauricio Escalon was born into a coffee-growing family that started in the 1870s, when his great-grandfather Pedro Jose Escalon planted coffee in Santa Ana and founded El Molino – El Salvador’s first industrial coffee mill. After a difficult period due to the coffee price crisis, Mauricio revived the family business by founding Cafescal in 2003, focusing on specialty coffee. The name stands for “Cafes Escalon Calderon,” combining his parents’ last names. Today, Cafescal operates 10 farms and 2 mills. Mauricio, an architect by training, now manages agricultural operations. San Jose Estate, located in the Ilamatepeq mountain range near Lake Coatepeque, features clayish volcanic soils and altitudes from 1,400 to 1,600 meters. This creates ideal conditions for growing varieties like Bourbon, Pacas, Parainema, Marsellesa, and Yellow Icatu under the shade of orange trees. The farm is also home to Cafescal’s Beneficio San Jose processing plant. The microclimate and soil combine to produce coffees with bright acidity, complex flavors, and a clean finish.
