El jardin is a family-run farm in la paz, honduras, established in 1981 And managed by four generations of coffee growers. Located at 1,400–1,650 m.A.S.L. Near the montecillos reserve, it features clay loam soil and a cool, mountainous climate that yields lower volumes but higher-quality beans. The farm grows both 85+ and 83-point coffees on 32 ha, alongside avocados, while promoting sustainable practices through organic matter recycling and soil conservation. Their signature process is a 90-hour dry anaerobic natural fermentation: Ripe cherries are hand-sorted, fermented whole in airtight tanks, then dried on raised beds. This method develops intense aromas and tropical flavor notes—bright, fruity, berry-like, and winey—while avoiding overly alcoholic profiles thanks to a carefully controlled ph level.
